Tradition doesn’t come easy, though my grandfather certainly made it seem that way. From the loading docks of a meat plant to our exquisite location in Sweet, Idaho, our family has steadily passed on the tradition and craftsmanship of butchery over three generations.

“Growing up in a Sicilian family, I spent my childhood helping my mother and father in the kitchen preparing traditional meals for friends and family. This passion for exceptional food always hovered on the fringe until my wife convinced me to follow my dream and attend culinary school. Starting in a family-owned “think local” scratch kitchen, I’ve since had the pleasure of working for the Bricktown Marriott in OKC, Luciano’s Ristorante, The Terraces of Boise, and Bon Appètit.
My style of cooking? I call it “Bold but Familiar.” I enjoy taking classic elements, ideas and techniques and putting my twist on them using fresh, local ingredients, pairing and plating in a manner until a meal becomes a small bite of heaven. I joined Anderson Reserve because they share this same vision for food and the dinning experience. Together we look forward to sharing a truly memorable experience for our guests.”
